Tony's Pastries is owned and operated by Tony
Holden who has been in the pastry business for
almost 20 years working at such places as the
Keltic Lodge, Jasper Park Lodge (both Conde
Naste award winning resorts) and Hotel Beausejour
in Moncton. He has made desserts, chocolate
and sugar sculptures for such notables as Prince
Charles and Princess Diana, Princess Margaret,
The Emporer of Japan, Anthony Hopkins, Billy
Joel and Christy Brinkley. His desserts have
been featured in such magazines as Food &
Wine and Canadian Living Magazine.
